The perfect Vietnamese Egg Coffee

From northern Vietnam I bring you...Cà Phê Trung! Otherwise known as egg coffee - a delicious cup of coffee like you have never tasted before.


When wandering around the streets of Hanoi in northern Vietnam I discovered cà phê trung aka egg coffee. I can only describe this as a drinkable cup of liquid tiramisu. It's perfectly balanced with sweetness from the egg foam and bitterness from the coffee. This innovation was born out of dairy shortages during the French colonisation of Vietnam that has developed into a classical must try drink of northern Vietnam.


Typically, cà phê trung is made with Vietnamese robusta beans that are ground down into coffee powder. The robusta beans are dark, strong and nutty in flavour which is the perfect compliment to the sweet egg component. However, if you can't get your hands on any just use your favourite coffee of choice, ideally the stronger the better.


So to cut to the chase, if you are not visiting Vietnam any time soon then here's a recipe to make this banging cup of coffee with a twist!
