Eat with colour as we discover how to make the delicious Nem Cuốn aka Vietnamese fresh spring rolls, but with a twist. Found all over Vietnam these rolls wear many masks, in the south they are known as gỏi cuốn, the north nem cuốn and in the central Viet cơm cuộn.
These fresh and vibrant bites are perfect for clean eating enthusiasts craving lip-smacking fresh flavours. To deliver this I have taken away classical meat and fish elements and converted this into a delicious vegan recipe using crispy chilli tofu, juicy pineapple and crunchy vegetables with a hint of chilli that will help make hitting your "five a day" easy. This is a great activity to try with friends and family and a nutritious way to encourage kids to eat more fruit and vegetables.
There are no rules to making spring rolls so you can pretty much mix and match any vegetable or fruit that tickles your fancy. So if you see something you don't like, don't worry just take it out or swap it! There are also creative ways to boost flavour through cooking techniques such as pickling carrots or cucumbers or caramelising onions etc. However, this recipe keeps it simple but doesn't skimp on taste! The only thing to consider is which dipping sauce are you going to serve it with?

Homemade fake fish dipping sauce
Ingredients:
1 tbsp of fake fish sauce - click here for the vegan recipe
2 tbsp of acidic ingredient - lime/lemon juice/vinegar
3 tbsp of sugar
200 ml warm water
1 tbsp of finely diced chilli and optional garlic
Method:
In a small bowl mix vegan fish sauce, acidic ingredient (lime or lemon juice or vinegar), sugar and warm water until fully combined.
Add chopped chilli and optional garlic.
Serve the rolls with the dipping sauce
